What Is Cellar Conditioning?
Cellar conditioning and cooling is a process that regulates the temperature and humidity of your wine cellar, to ensure that your bottles are ageing at the correct temperature.
Most cellar conditioning systems are a combination of indoor and outdoor units, which pull air from the outside, cool it, and then once cooled, circulate the air around the cellar.
To ensure the temperature and humidity levels are at the correct range, most cellar conditioners are fitted with sensors that can monitor the range and alter it if need be.

Each type of unit requires different installation requirements, whether that be through the wall or freestanding, so it is important to consult any installation diagrams before installation.
Why Do You Need Cellar Conditioning?
For appropriate ageing, the temperature of your wine should not exceed 24˚C. This is the temperature at which your wine will begin to oxidise, negatively impacting the taste of the wine.
Without a cellar conditioner, it is likely that the cellar could reach unhealthy temperatures without you noticing, jeopardising the taste of the wine when it comes to serving.
Without the right amount of humidity, your wine corks are at risk of drying out. When the cork dries out, oxygen enters the wine, affecting the taste and ruining the wine. To avoid this, ensure that you are keeping humidity levels high.
It is best to keep humidity levels at around 65-75% and 12–13°C as the temperature. Spending some extra time taking care of the environment in which your wine ages is essential for a great-tasting wine.
